I. Introduction
Cassava (Manihot esculenta), also known as manioc, tapioca, yuca, and mandioca, is a domesticated species of tuber, a root crop originally domesticated perhaps as long ago as 8,000–10,000 years ago, in southern Brazil and eastern Bolivia along the southwestern border of the Amazon basin. Cassava is today a primary calorie source in tropical regions around the world, and the sixth most important crop plant worldwide.
Tapioca starch is a white, bland-flavored starch extracted from the storage roots of the cassava plant (Manihot esculenta). Tapioca Starch is widely known as the most “bland-flavored” starch in the world.

+ Binders: Attach products and prevent dryness during processing such as sauces and stuffed meat.
+ Stabilizers: Use the high water holding capacity of starch as used in creams, baking powders, pasta flour.
+ Thickeners: Using the paste-like characteristics of soups, baby food, sauces, sauces and other spices.
+ Paper industry:
- Increased durability, folding, waterproof for paper
